PREPARATION
- • Preliminary preparation of rice sticks:
- 1. Boil rice sticks in hot water for 1 minute
- 2. Drain water from rice sticks and set aside for use later
- • Stir fried rice noodles:
- 1. Pre-boil shredded chicken, cabbage, mushroom, carrots and set aside for use later when it's cooked
- 2. Peel snow peas and pre-cook briefly in boiling water
- 3. Heat 1 tablespoon of cooking oil and stir fry chopped spring onions
- 4. Remove cooked spring onions from heat once fragrant
- 5. Add shredded chicken to the pan and stir fry
- 6. Add pre-boiled ingredients (cabbage, mushrooms, carrots) and simmer with meat
- 7. Once vegetables have softened, stir fry with high heat
- 8. Add water, seasoning, soy sauce, pre-boiled rice sticks and pepper to taste
- 9. Cover the pot and simmer with low heat for approximately 2 minutes
- 10. Lastly, add snow peas and stir fry on high heat until water has been absorbed by the rice sticks
