Giant Oatmeal Cookies

Ingredients

140g Plain flour
½ tsp Baking soda
½ tsp Salt
100g Castor or brown sugar
125g SCS Unsalted Butter
2 Eggs
1 tsp Vanilla Essence
160g Captain Oats Quick Cook Oatmeal
65g Chocolate chips

Method
  1. Put butter and sugar in an electric mixer and beat till fluffy.
  2. Add eggs slowly and continue to beat. Fold in well.
  3. Slowly add flour, oatmeal, baking powder, salt and chocolate chips and mix well.
  4. Roll and portion out into 70g per cookie. Use the ball of your palm to press down on the dough to form a giant cookie.
  5. Place on baking tray and bake for 25 minutes.

Chef’s Note : Baking times may vary depending on the oven so keep an eye on your cookies and adjust the timing accordingly.
