How to cook

Season & Cook

  • Halve each baby bok choy. Drizzle the salmon filets and bok choy with 2 tsp of olive oil. Season with 1/2 tsp of salt and 1 pinch of pepper.
  • Cook for 13 minutes at 425°F.

Make Curry Sauce

  • Heat 2 tbsp of olive oil over medium-high; stir in curry paste and simmer for 4 minutes.
  • Add in coconut milk and cook for 4 minutes.
  • Add the fish sauce, sugar, 1/4 tsp of salt, cilantro sprigs and the juice of half a lime to the curry and coconut milk mixture.
  • Simmer for 2 minutes, then remove the cilantro sprigs.
  • Remove curry sauce from heat.

Serve

  • Pair salmon and bok choy with Thai Red Curry sauce.
  • Enjoy!
