Razor clams
500 g
Oil

Vermicelli
(soaked)

Light soya sauce
12 tbsp
Shaoxing wine
1 tbsp
Sesame oil
1 tbsp
Pepper
18 tsp
Sugar
14 tsp
Chicken stock
2 tbsp
Red chilli
(deseeded and diced)

Cilantro
(optional to garnish)
How to cook
Step 1
  • Use a sharp knife, cut along the top seam of the razor clam to separate the flesh from the shell
Step 2
  • Remove the flesh from the shell
Step 3
  • Cut and discard the dark intestinal tract
Step 4
  • Set aside in the fridge until you are ready to cook
Step 5
  • Mix light soya sauce, shaoxing wine, sesame oil, pepper, sugar and chicken stock in a bowl
Step 6
  • Heat up the pan, pour in oil and fry minced garlic until fragrant
  • Strain and set aside
Step 7
  • Add a layer of vermicelli on the shells followed by the razor clam meat
  • Sprinkle minced garlic and diced chilli on top
  • Steam for 4 minutes
Step 8
  • Garnish it with cilantro and serve!
